Both of these cooking methods cause the food to dry out when cooked at a high temperature, making it crispy on the outside and juicy on the inside. So, if you’re looking for ways to fry your fish to perfection, there are a number of things to take into account. 1.Dry your fish before beginning
Whether you’re using fresh or frozen fish, it is very important to dry it well before getting down to preparing and frying your fish. The best way to dry it is to wrap the piece or pieces in absorbent paper and try not to leave any water behind. Any remaining liquid will cause the hot oil to splash when the piece is placed in the pan.
2.Cut the fish into medium slices
Once dried, the fish should be cut. For best results, the fish should ideally be cut into medium sized pieces, neither too big nor too small. This makes it easier to control how the fish is cooked and avoid the temperature of the oil dropping when we put the piece in the pan.
3.Coat with flour for frying and forget the egg
This step is an important one! One of the key steps in this process: using flour. In this case, it’s best to avoid breadcrumbs and egg, two frying classics, because the ideal point of fried fish is that crunchy on the outside and tasty on the inside texture, and the egg will only make our batter crunchy. Therefore, the flour coating will be enough to achieve a kind of crust around the fish with an incredible taste.
4.Fry with olive oil, extra virgin olive oil or sunflower seed oil
All three are equally valid for preparing fried fish, but you choose which oil is best for you based on what kind of taste you want to achieve in the end, whether that be a stronger or lighter taste.
5.Use clean oil
It is very important to use clean oil to fry the fish. Otherwise, if you reuse oil from other fried foods, this may alter the final taste, and not for the better. You’ll also need to pour a large amount of oil into the frying pan as the fish should be submerged well in order to fry up perfectly. After all, it’s better to have more than not enough!
6.Fry at a high temperature for a short time
To get the fish to its ideal texture, very crispy on the outside and very tasty on the inside, we will have to make sure that we heat the oil to a fairly high temperature. This should be somewhere between 180 and 210 degrees, we’ll fry it for a short time, between 30 and 60 seconds per piece.
7.Remove any excess oil
The final step in your fish frying process will be to get rid of any excess oil that has adhered to the fish after removing it from the oil. To do this, we will just need a bit absorbent paper that will be used to eliminate this excess oil immediately after frying the fish.
